This week, the Babish Culinary Universe is going through a serious cheese phase. No, I'm not upset about it either. Pop a lactose supplement and lube up your favorite frying pan, because we're about to make taco night look like a punk.
Ingredients & Shopping List
+ For the chicken quesadillas:
Sharp cheddar cheese, grated
Monterey jack cheese, grated
3 chicken breasts, butterflied and pounded thin
Flour tortillas
Sauteed peppers and onions (optional)
2-3 Tbsp oil per quesadilla
Guac, salsa, and sour cream for serving
+ For the chicken marinade:
2 Tbsp vegetable oil
2 garlic cloves, crushed
1 tsp oregano
1 Tbsp cumin
1 tsp cayenne
1 tsp paprika
1 tsp white sugar
1 lime, juiced
1 Tbsp olive oil
1 tsp kosher salt
1 tsp freshly ground pepper
+ For the steak quesadillas:
1 skirt or hangar steak
Salt and pepper
Vegetable oil
Diced onion and pepper (to cook after the steak)
Monterey jack cheese, grated
Sharp cheddar cheese, grated
Flour tortillas
+ For the vegetarian quesadillas
1 zucchini, finely chopped
1 can corn, drained and rinsed
Vegetable oil
Monterey jack cheese, grated
Sharp cheddar cheese, grated
Flour tortillas
+ Fo the guac:
2 avocados
1/2 small red onion, finely chopped
1 large jalapeno, seeded and diced
2 cloves garlic, grated
1 lime, juiced
Cumin, to taste
Salt and pepper, to taste

    mexican guy here what you did are considered just tacos with cheese, for them to be quesadillas first you need to add the cheese in the tortilla and have it melt, then add the filling over the melted cheese.

    It's hilarious how unless someone's a vegetarian they won't usually know how many of us thrive with veggie meats. I'm not trying to be nasty or anything, it's just not the 1st time I've observed a vegetarian menu being made far from what real veggie heads would eat.

    I have a suggestion. Instead of wasting a plastic bag every time you marinade something - I imagine you are hopefully woke about waste and single-use plastics - why not use a stainless steel bowl or plastic bowl, which you can then clean and re-use?

      Yes. Just use half the amount of normal salt that the recipe calls for. Example, if a recipe calls for a tabelspoon of kosher salt, reduce that to half table salt or slightly less so your dish doesn't come out too salty.

    Quesadillas are not texmex, white flour tortillas are a staple of north mexico cuisine, you need to use oaxaca cheese, also you dont use oil to heat up, you just do it on the pan.. Just by the looks and the over process, they dont taste even close to a bbq quesadilla, which i think what you tried to, also no one in mexico uses sour cream..

    A lot of the Mexican vendors here in California drop the cheese on the griddle first and let it crisp a little and melt, and then drop the tortilla on top, scoop up the whole thing with a metal spatula, and then drop the meat filling on it if any.

    My personal favorite quesadilla is taking a corn tortilla, throwing some Monterey Jack shredded cheese on there, heating it up the ol’ microwave and slathering some sour cream on it. 👌 I don’t like folding them or sandwiching two tortillas. Nah, no top. One tortilla
